A Copenhagen hospitality group that grew from a single site to five venues and over 100 staff. Over the last year, we've worked with ownership to restructure management roles, built communication systems across locations and departments, rebuilt how they recruit, and helped with the day-to-day. The engagement is ongoing and today we act as a sounding board for owners, managers and staff, whilst tackling specific projects, like tidying up the digital back-end of the company.

Kerry joined us at a critical time. We had reached capacity in our bakery and hit the ceiling of what our years of running Fovl had taught us. He brought a breath of fresh air to the table: an organised, structured way to work, much-needed senior leadership and coaching for our managers, and a friendly but straightforward extra voice around the table. It's been transformative as owners, how we see our impact on the business, and helped us focus more on the 'why' and less on the 'how'.

MAD Symposium

MAD's flagship symposium — MAD7 — returned in 2024 after a six-year hiatus. We produced a series of bespoke parties and events for visiting chefs and guests, managed consultant and vendor relationships, and led the delivery on the ground. Separately, we've worked with MAD to develop and deliver educational content as part of its Academy programmes. We supported production, ideation, and programme structure across multiple weeks of instruction.

Pauli

A small Copenhagen restaurant going through the bumpy stuff: menu changes, staff turnover, and difficult personal circumstances. We came in to support the owners through that stretch, steadying the operation, reviewing service and front-of-house systems, and helped the business find its feet again. Pauli was our first consulting client, and it started the way most of our work does, via a conversation with someone who needed a hand.

Fælles came in at a point where we needed to take a proper step back and rethink things. They quickly got under the skin of the business, were very honest about what wasn’t working, and helped us shape a much clearer direction. It didn’t feel like theory, it felt practical and doable, which is exactly what we needed.

Nr. 30 Restaurant & Stjernen Bar

A neighbourhood bar and restaurant in Copenhagen. Independently owned by a partnership, they've matured as people and reached a point where they needed to step back and reassess who does what and which milestones lay ahead. Through candid conversations with the owners we’ve clarified future governance, and helped them land on an operating model that reflects where they are now.
